Chef Chantel believes that she is only as good as her team - it is important for her to inspire a team of people who are as passionate about food and wine as she is. Together they strive towards executing each service to exacting standards while maintaining a healthy morale in their work environment. Even when the brigade takes time out to sit down and enjoy a good meal themselves, or when they are working together to create the “perfect pairing” they share knowledge, passion and always encourage the deeper understanding of food, wine and gastronomy.

Chef Chantel Dartnall was the founder and Head Chef of Restaurant Mosaic at the Orient for 15 years, before moving to France in 2021, where she now serves as the chef owner and director of Château des Tesnières in Torcé.

Pastry Chef at Restaurant Mosaic

Her introduction to fine dining came as a student, when she joined Chef Chantel Dartnall’s team at Restaurant Mosaic at The Orient. It was the first fine dining kitchen she worked in, and one that left a lasting impression. She later returned to work alongside Chef Chantel for five years, refining her skills and finding her voice.

Molly Read

Bursary Beneficiary 2026

A chef who thrives under pressure, Molly actively seeks competitive challenges to push her creativity. At 18 she was a finalist on the South African television baking competition, The Tastemaster SA. Her developing talent was further validated at culinary school, where she placed in the top two in both years of the highly regarded ‘Legacy’ competition, taking first place in her initial year.

Hugo Bétin

Sommelier at Restaurant Mosaic

Hugo earned his sommelier diploma in 2017 and immediately returned to the French Riviera to reconnect with his mentors, Philippe Magne and Claude Derien, who guided him during his formative years at the renowned restaurant La Chèvre d'Or in Èze-Village. Under their direction, he deepened his knowledge of the great wines of the French terroir and discovered the exceptional vintages of Italy.
