Originally from Torcé and now 27 years old, Hugo brings with him a wealth of experience and a genuine passion for the world of wine and hospitality.
Hugo earned his sommelier diploma in 2017 and immediately returned to the French Riviera to reconnect with his mentors, Philippe Magne and Claude Derien, who guided him during his formative years at the renowned restaurant La Chèvre d’Or in Èze-Village. Under their direction, he deepened his knowledge and understanding of the great wines of the French terroir and discovered the exceptional vintages of Italy.
Eager to broaden his horizons, Hugo then moved to Dublin, Ireland, where he joined the esteemed restaurant, Patrick Guilbaud. There, he continued expanding his expertise in wines from around the world while perfecting his English.
Hugo’s love for wine began in high school, when his natural curiosity led him to explore the world of beverages—starting with beer and eventually discovering wine. He quickly became fascinated by the subtleties that define the craft: for example, why a 2017 vintage might be exceptional while a 2018 from the same estate could differ so greatly. This pursuit of understanding ignited a lasting passion that continues to inspire him today, with much still left to explore.
Above all, Hugo loves being on the dining room floor—engaging with guests, helping them feel at ease, and ensuring they enjoy a memorable experience. For him, the restaurant world reflects his own philosophy: the simple pleasure of sharing, whether in an elegant fine-dining setting, a local brasserie, or around the family table.
